Meals to Smile About Recipes by NDCS Staff

NDCS continues its fund-raising campaign for its cookbook ‘Meals to Smile About’, a compilation of recipes to support patients recovering from dental treatment and those who may have chewing and eating difficulties. Word of Mouth speaks to NDCS contributors – Cl A/Prof Ken Tan and Nurse Manager Yasmen Binte Mohd Moidin – on their inspiration behind their recipes.

When Cl A/Prof Ken Tan is not working, he likes to gather with his friends over good food and wine. Like many Singaporeans, he enjoys his food and tries to recreate some of his favourite dishes when he gets home. Cooking, according to Prof Tan, who is NDCS’ Senior Consultant in the Department of Restorative Dentistry and Chief Risk Officer, “is a pleasant way to de-stress as it utilises a different mindset and knowledge base”.

He contributed his recipe, Steamed Chicken with Ginger and Garlic Sauce, to the cookbook and told Word of Mouth that he had created this sauce for the steamed salted chicken dish after he had tried it elsewhere and he liked it. “The sauce not only goes well with steamed chicken, it also goes well with fish and other dishes as well,” he adds.

Sago Pudding with Gula Melaka (Palm Sugar) is one of Sister Yasmen’s comfort food items since she was a child. She loves the dish simply because it is easy to prepare and it is a dessert where she can eat it anytime of the day. Like Prof Tan, Sister Yasmen enjoys cooking as she finds it therapeutic to be in the kitchen. Unlike in the past where she can head out with her family to unwind in the weekend, she now spends more time indoors cooking for her family due to the pandemic.
